The present invention relates to new thickening agents from Cassia grandis polygalactomannan and their use alone or in combination with xanthan, pectin, carrageenan etc thickening agents as thickening agents. The improved thickening agent or a highly effective thickening agent composition is suitable for application in food, textile and paint industry.
